Italian Creme Cake

As I mentioned in my previous post, I recently made my longest cake delivery to date! Now, in order to make an 800 mile delivery, you know it would have to be for someone very special. In November my entire family gathered to celebrate my grandmother's 85th birthday. Of course, I couldn't turn down the opportunity to make her cake! The cake survived the trip fairly well and was enjoyed by all!

I tried a new recipe and am now wondering why I never tried it sooner! Italian Creme Cake is a new favorite of mine. I used the recipe from The Pioneer Woman.
If you are in need of a dessert this weekend (and who isn't?) you should definitely try this cake! It just might become your new favorite!

Finally...another post!

It has been a long time since my last post!
Since then I have made an 800 mile cake delivery, celebrated Thanksgiving and Christmas, survived basketball season and am now enjoying spring soccer! Along the way, I have found some very interesting recipes that I can't wait to try and share as well.
In the meantime, here is a picture of a sweet cake I was able to make for a 6th birthday party! I forgot to take the picture before we left the house and so I took it while it was being held by my faithful cake delivery partner!


The cake design was based on the Lalaloopsy dolls which, come to find out, are pretty popular with little girls! This was a fun cake to make especially since the research included a trip to the toy store to learn about these cute little dolls!






A Taste of Fall


I love that fall is finally here! I love the crisp autumn weather, the beautiful colors and all the deliciousness of the season. There are so many wonderful recipes that can be made with the many pumpkins that accompany fall.

While I am sure that there are numerous healthy pumpkin recipes out there, this recipe for pumpkin muffins is one of my family's favorites! This recipe was passed to me from a friend to whom I will forever be indebted! While it may not be healthy, it is most definitely tasty!

(I plan on topping these with my favorite cream cheese frosting recipe and calling them cupcakes one day very soon! But for now let's call these little lovelies "muffins"...sounds a little healthier, don't you think!)

Pumpkin Chocolate Chip Muffins

4 eggs
2 cups sugar
1 16 oz can pureed pumpkin (not pumpkin pie mix)
1 1/2 cups vegetable oil
3 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon cinnamon
1 teaspoon salt
1 1/2- 2 cups semi-sweet chocolate chips

Mix together the first four ingredients. Sift dry ingredients and add to wet ingredients. Mix, and then add chocolate chips and stir. Bake at 400 degrees for 16 minutes.

The birthday girl was getting her room redecorated for her birthday in what else, but pink with zebra stripes! She wanted her party theme to match her new room decor. So here is her fun cake:


I used the Wilton grass tip for the border and love how it turned out!
